Our Maguey

The maguey, an emblematic plant of San Luis del Río, is the basis of mezcal production in the region. With a wide variety of species, such as Espadín and Tobalá , the maguey offers a wealth of flavors and aromas that are reflected in the highest-quality artisanal mezcals.

Espadín

(a. angustifolia)

The Espadín maguey, scientifically known as agave angustifolia, is a succulent plant native to Mexico, famous for being the primary species used in mezcal production. It can take between 7 and 10 years to mature and is characterized by long, spiny leaves. Espadín is prized for its high sugar content, resulting in a mezcal with a deep and complex flavor. Furthermore, this plant plays a crucial role in the culture and economy of rural communities, serving as a symbol of tradition and sustainability.

Tobalá

(a. potatorum)

The tobalá maguey, scientifically known as Agave potatorum, is a wild plant native to the highlands of Mexico, renowned as one of the most exclusive species used in mezcal production. It grows slowly, requiring between 12 and 15 years to reach maturity, and is distinguished by its compact rosette shape with short, broad leaves. Tobalá is valued for its limited but high-quality yield, producing a mezcal with sweet, floral, and exceptionally subtle notes. Due to its wild nature, this plant is a pillar of biodiversity and an emblem of artisanal mastery in mezcal-producing regions.
